Bev’s Homemade Orange – Pineapple Sherbet, by Beverly Hicks Burch

Bev’s Homemade Orange – Pineapple Sherbet

1 large can crushed pineapple, do not drained (one in syrup rather than juice is better)

1 can Eagle Brand Sweetened Condensed Milk

Orange soda like Fanta, Orange Crush, etc.

In the center container of an ice cream maker, pour in the can of crushed pineapple, juice and all. Add and stir in well the can of sweetened condensed milk. Next, add orange soda to the fill line of your ice cream maker, this (the fill line) is usually about 5 qts. Securely insert the paddle and the lid.

Place the inner ice cream making container into the bigger bucket and start packing with ice. Start with a layer of ice, then rock salt, layer of ice, layer of salt and so on until you reach the top of the maker. Some of you may have a hand crank or electric ice cream machine. So times will vary as to when the sherbet is done. My machine is electric, and I know it “done” when the machine stops cranking. If you have a hand crank, then you’ll know when it becomes very difficult to crank. Once it is done, let is sit in the cold ice water and ripen for a bit…about 10 minutes or so. I usually cover the top of my ice cream maker with towels during this time. If there are any leftovers, it will keep in the freezer, although it will become firmer…but, will be just as good.

This is a fantastic summer treat! Enjoy!
