Banana Pancakes

I use my Basic pancake recipe that I modify a bit and add one of my secret ingredients…pure vanilla flavoring…NEVER artificial!!

2 eggs

2 cups buttermilk

¼ cup oil

1 ¾ cups all purpose flour

3-4 tablespoons sugar

2 teaspoons baking powder

1 teaspoon soda

1 teaspoon salt

1 teaspoon vanilla flavoring

Ripe bananas

In a large bowl beat eggs, buttermilk, oil and vanilla flavoring. Mix dry ingredients together. Add dry ingredients to the wet ingredients and stir just until the larger lumps disappear. Do not over beat or stir.

Pour about ¼ cup of batter onto lightly greased hot griddle (about 400˚). Place slices of banana (about 1/8 to ¼ in. thick) on top of the pancake batter. Once the batter is bubbly and the edges are set, the pancakes are ready to turn. Turn and finishing cooking until golden brown. Remove and place on plate and lightly butter. Repeat process until all of batter is cooked. Makes about 16 pancakes.

Serve with your favorite syrup, but the Hawaiian version is served with Coconut Syrup. Maple is good too. Serve with bacon or ham.
