Orange Slice Cookies, Beverly Hicks Burch

Orange Slice Cookies

This recipe comes from my adopted home state, Alabama the beautiful and was provided by the Central Alabama Women’s Racing Auxiliary in Montgomery, AL by Lois Rewis. Welcome to Sweet Home Alabama!

This sounds like a variation of the Orange Slice Cake you can find in the South.

1 ½ cups brown sugar

2 eggs

1 teaspoon soda

1 pound orange slice candy

½ cup flaked coconut

½ cup rolled oats

½ cup shortening

2 cups shifted flour

½ teaspoon salt

½ cup flour

½ cup chopped nuts

Preheat oven to 350°.

Cream sugar, shortening and eggs until light and fluffy.

Sift together the 2 cups of flour, soda and salt then blend it into the creamed mixture.

Dice the orange slice candy, toss with ½ cup flour and add to the above ingredients.

Stir in coconut, oats and chopped nuts.

Roll into 1 inch balls and place on greased cookie sheet and press with a fork.

Bake 10 – 12 minutes.

Makes about 6 dozen cookies.
